Hi there, hope you’re having a great day! This weekend was a little rainy, so it was perfect for spending some time in the kitchen. I usually do most of my meal prep for the week on Sundays and Mondays since I work long days Tuesday-Thursday. I like things to be easy after work and to be able to maximize the family time that we get!
I have been loving recipes from The Merrymaker Sisters . I think the recipes are all easy, yummy, and healthy! The Merrymaker Sisters are some amazing ladies and I highly recommend checking them out, they actually inspired me to start this blog when I participated in their MerryBody program. Seriously, how beautiful is this?! It was pretty easy to throw together and it smells delish! I don’t like cabbage so I skipped that part but I added in cucumber for some extra veggie goodness. I also made a couple substitutions for ingredients I didn’t have but they didn’t really change the overall recipe – I tend to substitute a lot with recipes!
Healthy Cashew Chicken Another super easy and delicious recipe! Even my one year old gobbled it up!
For breakfast for the week I make their Easy Low Carb Bread. I’ve been making this for a few weeks, it is yummy and so filling. I top it with either peanut butter or avocado, but you could top it with anything you want really.
Lastly, I made a Mexican risotto recipe that I made up myself. I cooked up ground beef with sliced peppers and onions along with a packet of taco seasoning. Then I made Arborio risotto rice according to the directions and mixed the two together! I added in some black beans and corn and we served it with spinach, shredded cheese, salsa and sour cream. This was another family approved recipe. This was not a planned recipe, I was going to make burrito bowls but I didn’t have regular rice so I improvised!
